One Skillet Parmesan Crusted Asparagus

Parmesan Crusted Asparagus

One skillet parmesan crusted asparagus is made with thin stalk asparagus, garlic butter, breadcrumbs and fresh parmesan cheese.

Ingredients

2 bundles of fresh asparagus, thin stalks

1/2 cup butter, melted

2 TBS garlic, pre-minced in a jar

2 TBS olive oil

1/2 cup parmesan cheese, shredded

1/4 cup Italian seasoned bread crumbs

Salt and pepper

Instructions

1. Pour 2 cups of water into a frying pan and heat over stovetop to a slow simmer.
2. Cut about 1 inch off the bottom of the asparagus stalks and discard.
3. Add asparagus stalks to the simering water, spread out evenly. 
4. Simmer for 5 to 8 minutes then turn the asparagus over and simmer the for another 5 to 8 minutes.
5. While cooking check a stalk to see if it’s tender. You don’t want them mushy.
6. Once asparagus are tender, remove them from the pan and drain them, along with the water from the pan.
7. In a small bowl, melt butter in the microwave for about 15 seconds.
8. Add minced garlic to the butter.
9. Coat the bottom of the frying pan with half of the olive oil and put the burner on medium heat.
10. Add half of the asparagus to the pan, spread out evenly. It’s OK if the asparagus overlap.
11. Spoon half of the the garlic butter over the asparagus and then use a basting brush to sread it out.
12. Sprinkle the asparagus with half of the breadcrumbs, and then with half of the parmesan cheese.
13. Cover the pan with a lid until cheese melts over the asparagus, then remove from heat.
14. Transfer to a serving platter. 
15. Repeat steps 9 through 13 with the remaining half of the asparagus and layer onto the serving platter.
